Instructions
Cooking Steps
Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
Add chopped onions and sauté until they turn translucent.
Add ginger and garlic paste and sauté for another minute until the raw smell goes away.
Add chopped tomatoes and cook until they turn mushy.
Add coriander powder, turmeric powder, red chili powder, and salt. Mix well.
Add mixed vegetables and water to cover them. Mix well and cover the pan with a lid.
Let the vegetables cook for 10-12 minutes, or until they are cooked through.
Once the vegetables are cooked, remove the lid and let the gravy thicken to your desired consistency.
Garnish with fresh coriander leaves and serve hot.
