Instructions
Cooking Steps
Rinse the millet grains and soak them in water for 30 minutes.
Drain the water and keep the soaked millet grains aside.
Heat oil in a pan over medium heat.
Add mustard seeds, cumin seeds, and curry leaves. Sauté for 2-3 minutes until the mustard seeds splutter.
Add chopped onions, green chili, grated ginger, and sauté for 2-3 minutes until the onions turn translucent.
Add mixed vegetables and sauté for another 2-3 minutes until they turn slightly soft.
Add the soaked millet grains and sauté for 2-3 minutes until the grains turn slightly toasted.
Add water and salt to taste. Mix well.
Cover the pan with a lid and let it cook for 10-12 minutes over medium-low heat until the water is absorbed and the millet is cooked.
Add lemon juice to taste and mix well.
Serve hot.
