Instructions
Preparation
Rinse the foxtail millets in water and drain. Keep them aside.
Cooking Steps
1. In a pan, heat oil over medium heat. Add cumin seeds and let them splutter.
Add sliced onions and sauté for 2-3 minutes until they turn translucent.
Add chopped carrots and capsicum and sauté for another 2-3 minutes until the vegetables are partially cooked.
Add chopped tomatoes, coriander powder, garam masala, turmeric powder, and salt. Stir well.
Add the rinsed foxtail millets and mix well, ensuring that it's coated in the masala.
Add water and stir well.
Cover the pan with a lid and let it cook for 30-35 minutes over low heat until the foxtail millets are soft and cooked.
Garnish with fresh coriander leaves and serve hot.
