Cooking Steps
Soak the urad dal in water for 4-6 hours or overnight.
Drain the water and grind the urad dal into a smooth paste using a blender or wet grinder. Add water as needed.
In a mixing bowl, combine the Foxtail or Barnyard Millet flour with the urad dal paste. Add salt to taste and mix well. Add water as needed to make a smooth batter. The batter should have a pouring consistency.
Cover the bowl and let the batter ferment for 8-10 hours or overnight. The batter should rise and become slightly sour.
Heat a non-stick tawa or griddle over medium heat.
Grease the tawa with a few drops of oil.
Pour a ladleful of batter on the tawa and spread it into a thin circle.
Drizzle some oil around the edges of the dosa and cook until the bottom is golden brown and crisp.
Flip the dosa and cook until the other side is also golden brown and crisp.
Remove the dosa from the tawa and serve hot with coconut chutney or sambar.
