Instructions
Preparation
-Clean and chop the methi leaves. Wash them thoroughly to remove any dirt. Set aside.
Cooking Steps
Heat oil in a pan over medium heat. Once hot, add cumin seeds and allow them to splutter.
Add chopped onions and sauté until they turn golden brown.
Add ginger-garlic paste and green chili. Sauté for a couple of minutes until the raw smell disappears.
Add chopped tomatoes, turmeric powder, red chili powder, coriander powder. Cook until the oil starts to separate from the masala.
Add chopped methi leaves and sauté for about 4-5 minutes, or until the leaves wilt and cook down. The bitterness of methi will reduce as it cooks.
Gently add paneer cubes and mix well.
Add salt and garam masala. Mix gently to coat the paneer and methi with the spices.
Cover and let it simmer on low heat for about 8-10 minutes, allowing the flavors to meld together.
Taste and adjust salt and spices if needed.
Garnish with fresh coriander leaves and serve hot.
