Instructions
Preparation
Boil potatoes, carrots, green beans, and green peas in a pressure cooker for 2 whistles until soft and tender.
Cooking Steps
Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
Add chopped onions and sauté for 2-3 minutes until they turn translucent.
Add chopped tomatoes, green chili, and ginger-garlic paste. Cook for 2-3 minutes until the tomatoes soften.
Add coriander powder, cumin powder, red chili powder, turmeric powder, and salt. Stir well.
Add the boiled vegetables and mix well. Mash the vegetables with a potato masher or a ladle until they are well blended.
Cook for 2-3 minutes until the bhaji is heated through.
Garnish with fresh coriander leaves and serve hot.
