Instructions
Cooking Steps
In a bowl, beat the eggs until they are well combined and slightly frothy. Add a pinch of salt and mix.
Heat the oil in a non-stick pan over medium heat.
Add the chopped onions, green chili, and a pinch of salt to the pan. Saute until the onions become translucent.
Add the chopped tomatoes and cook for another 2-3 minutes until they soften.
Lower the heat to medium-low, and pour the beaten eggs into the pan, spreading them evenly to cover the vegetables.
Let the omelette cook on medium-low heat until the bottom is set, and the top is slightly runny.
Carefully flip the omelette to the other side using a spatula and let it cook for another minute or so.
Once the omelette is fully cooked, slide it onto a plate, and garnish with chopped coriander leaves.
