Instructions
Preparation
-Soak chickpeas overnight
-Pressure cook soaked chickpeas.
Cooking Steps
In a large bowl, combine the chopped lettuce, boiled chickpeas, broad beans, chopped cucumber, and chopped onion.
In a small bowl, whisk together the fresh lemon juice, olive oil, salt, and pepper.
Pour the dressing over the salad and toss well to combine.
Add the chopped fresh parsley and mint to the salad and toss again.
Serve the salad at room temperature.
