-Mince chopped garlic.
Cooking Steps
In a large bowl, combine mixed lettuce leaves, drained and rinsed chickpeas, drained and rinsed kidney beans, sliced cucumber, sliced red bell pepper, chopped fresh parsley, and chopped fresh mint leaves. Toss well.
In a small bowl, whisk together lemon juice, minced garlic, salt, and pepper to make the dressing.
Pour the dressing over the salad and toss well to coat.
Serve the salad.
