Instructions
Cooking Steps
Rinse the red lentils (split masoor dal) and drain the excess water.
Heat oil in a large pot over medium heat. Add chopped onion and garlic, and sauté until the onion turns translucent.
Add chopped tomatoes and carrots, and sauté for 2-3 minutes until the vegetables are slightly softened.
Add rinsed red lentils (split masoor dal), water, cumin powder, paprika powder, salt, and black pepper. Mix well.
Bring the soup to a boil, then reduce the heat to low. Cover and simmer for 20-25 minutes until the lentils are tender.
Remove the pot from heat and let it cool for a few minutes.
Use an immersion blender or transfer the soup to a blender and blend until smooth.
Garnish with fresh parsley leaves and serve hot.
