Lauki Ka Halwa
Lauki Ka Halwa is a dessert made with grated bottle gourd, milk and a few spices. This recipe is a popular dish to have during Navratri fasting, as it is gluten-free and vegetarian. Bottle gourd, elongate, pale green
1 small (400g)
Skimmed Milk
2 cup (500g)
cardamom powder
1 tsp (2g)
Chopped Walnuts
1 tbsp (10g)
Ghee
1 tsp (5g)
Saffron
1 tsp (1g)

Preparation
- Wash and grate Bottlegourd/Lauki and squeeze out the excess water using a muslin cloth or a strainer. Keep aside.
Cooking Steps
In a heavy-bottomed pan, heat ghee over medium heat.
Add the grated bottle gourd and sauté for 5-7 mins.
Add low fat/skimmed milk to the pan and cook for 15-20 minutes until the milk is reduced and the bottle gourd is soft.
Add cardamom powder, pitted dates and saffron. Stir well and cook for another 5-7 minutes until the halwa thickens.
Add chopped walnuts and mix well.
Serve hot .
