Cooking Steps
Step 1: To make gourd elder greens, first roast the elder gourd in a frying pan
Step 2: Keep in mind that big burns do not happen
Step 3: After it is roasted, keep it to cool down
Step 4: Heat oil in a pan, add cumin seeds, mustard seeds and asafoetida
Step 5: After 20 seconds, add green chili and ginger kahasun
Step 6: After 1 minute add gourd and cook till it becomes soft
Step 7: After it gets soft add big roasted and mix it
Step 8: Now add red chili powder, turmeric powder, coriander powder, garam masala powder and salt
Step 9: After 10 seconds add milk to it and cook on low heat for 20 seconds
Step 10: Garnish with green coriander and serve hot
Step 11: Serve gourd elder vegetables with panchamel dal and tawa paratha for dinner
