Preparation
-Wash, peel and cut pumpkin into dice shape.
Cooking Steps
1. Boil the diced red pumpkin in a pan until it is soft and tender.
Drain the water and let it cool down.
In a mixing bowl, whisk the plain yogurt until it becomes smooth and creamy.
Add the boiled red pumpkin to the yogurt and mix well.
Heat the oil in a small pan over medium heat.
Add the cumin seeds and mustard seeds to the pan and let them crackle.
Add the turmeric powder to the pan and stir well.
Pour the tempering over the red pumpkin and yogurt mixture.
Add salt to taste and mix well.
Garnish with fresh coriander leaves and serve chilled.
