Preparation
- Blanch carrot and green peas for few mins. set aside.
Cooking Steps
Rinse the kodo millet grains under running water and soak them in water for 1-2 hours.
Drain the water from the soaked kodo millet grains and add them to a pressure cooker. Add 2 cups of water and pressure cook for 3 whistles.
Once the pressure is released, open the cooker and let the kodo millet grains cool down.
Once the kodo millet grains have cooled down, fluff them up with a fork to separate the grains.
Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds and let them splutter.
Add chopped onions and sauté until they turn translucent.
Add blanched chopped carrot and green peas. Mix well and cook for 2-3 minutes.
Add the cooked kodo millet grains to the pan. Mix well.
Add turmeric powder, red chili powder, and salt. Mix well, ensuring the kodo millet grains and vegetables are coated in the spices.
Cover the pan with a lid and let it cook for 5-7 minutes over low heat until the kodo millet grains are heated through and the vegetables are tender.
Serve hot.
