-Grind the grated coconut, green chilies, and cumin seeds into a coarse paste with 1 tbsp of water. Set aside.
Cooking Steps
Steam Vegetables:
- Steam all the vegetables in a steamer for about 8-10 minutes or until tender but not mushy.
- Steaming retains nutrients and uses no added oil.
Add Coconut Paste:
- Once the vegetables are steamed, transfer them to a mixing bowl.
- Add the prepared reduced coconut paste and mix gently.
Finish with Yogurt and Oil:
- Allow the vegetables to cool slightly.
- Add low-fat yogurt and mix well. This will add creaminess without excessive fat.
- Drizzle just 1 tsp of coconut oil for authentic flavor and aroma.
- Add fresh curry leaves and gently toss.
