Soak yellow and black mustard seeds in water for 10 minutes to soften them for grinding.
Gently roast the banana leaves over an open flame or steam them for 1 minute to soften and prevent tearing during wrapping.
Cooking Steps
Grind Mustard Paste:
- Using a small grinder, blend the soaked mustard seeds, green chilies, a pinch of turmeric, and salt with minimal water into a smooth paste.
Marinate the Fish:
- Coat the Hilsa pieces thoroughly with the mustard paste. Add 1 tsp mustard oil and gently massage the paste into the fish. Let it marinate for 10–15 minutes.
Wrap the Fish:
- Place each marinated fish piece on a banana leaf. Spoon some extra marinade over the fish. Fold the banana leaf to wrap the fish completely, and secure it with a thread or toothpick.
Steam:
- Steaming: Place the wrapped fish in a steamer and steam for 10–12 minutes until the fish is fully cooked.
