In a large saucepan, heat the lactose-free milk over medium heat until it reaches 180°F (82°C). Stir frequently to prevent scorching.
Remove the pan from heat and let it cool to 110°F (43°C).
In a mixing bowl, whisk together the 1/4 cup plain yogurt and 1/2 cup of the cooled milk until smooth. Add this mixture back into the remaining milk and stir well.
Pour the mixture into a clean cheesecloth or kitchen towel-lined strainer and place it over a large bowl. Cover with a lid or plastic wrap and let it sit at room temperature for 6-8 hours, or until it reaches your desired thickness.
Once it has reached your desired thickness, transfer the Greek yogurt to a clean container and store it in the refrigerator for up to 2 weeks.
