Cooking Steps
In a bowl, mix the hung curd (thick yogurt), chopped coriander leaves, mint leaves, ginger-garlic paste, lemon juice, garam masala, cumin powder, coriander powder, kasuri methi, red chili powder, chaat masala (if using), and salt.
Make green chutney from Coriander leaves and mint leaves, spinach(if using)/ Grinded green peas and mix it with Curd , this will be marinade.
Add the cut vegetables to the marinade and mix well, ensuring all the pieces are coated. Let it marinate for at least 1-2 hours in the refrigerator for the flavors to infuse.
Preheat your grill or oven to medium-high heat.
Thread the marinated vegetable pieces onto skewers, alternating the vegetables for a colorful presentation.
Brush some oil over the vegetable skewers to prevent sticking.
