Pour the milk into a large pot and heat it over medium heat until it reaches 180°F (82°C). Stir the milk occasionally to prevent it from scorching.
Once the milk reaches 180°F (82°C), remove it from the heat and add the lemon juice. Stir gently until the milk begins to curdle.
Let the milk sit for 10-15 minutes until the curds and whey separate. The curds will be the cheese and the whey will be the liquid.
Line a colander with cheesecloth and place it over a large bowl. Pour the curds and whey into the cheesecloth-lined colander.
Gather the cheesecloth around the cheese and squeeze out any excess liquid.
Sprinkle salt over the cheese and mix it in with your hands.
Place the cheese on a plate and let it sit at room temperature for 1-2 hours to firm up.
Once the cheese has firmed up, you can slice it and use it.
