Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
Add chopped onions and sauté until they turn translucent.
Add minced garlic, grated ginger, and chopped green chili (if using). Sauté for another minute.
Add chopped bok choy and sauté for 2-3 minutes until it starts to wilt.
Add baby spinach and sauté for another 2-3 minutes until it wilts.
