Instructions
Cooking Steps
Rinse brown rice in cold water and soak for 30 minutes.
In a pot, bring 2 cups of water to a boil. Add the soaked brown rice and cook for 20-25 minutes or until the rice is tender and the water is absorbed.
In a large bowl, combine the cooked brown rice, crumbled feta cheese, cherry tomatoes, diced cucumber, and chopped fresh parsley.
In a separate bowl, whisk together the olive oil, fresh lemon juice, salt, and pepper.
Pour the dressing over the rice mixture and stir well to combine.
Serve the Greek rice warm or chilled.
