Instructions
Preparation
Blanching Cauliflower (Gobhi):
Bring a large pot of salted water to a boil.
Add cauliflower florets to the boiling water.
Cook for 2-3 minutes.
Use strainer to remove the cauliflower from the boiling water.
Immediately transfer the cauliflower to the bowl of normal water.
Let it cool in the water for 1-2 minutes.
Drain and use.
Cooking Steps
Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
Add chopped onions and sauté for 2-3 minutes until they turn translucent.
Add chopped tomatoes and cook for 3-4 minutes until they soften and turn mushy.
Add coriander powder, turmeric powder, and salt. Stir well.
Add blanched cauliflower florets, green peas, and chopped carrots. Mix well, ensuring the vegetables are coated in the masala.
Cover the pan with a lid and let it cook for 5-7 minutes over medium heat until the vegetables are cooked, but still have a crunch.
Garnish with fresh coriander leaves and serve hot.
