Cooking Steps
Heat a non-stick pan over medium heat and spray with oil. Add the cubed paneer and dry roast until it is golden brown on all sides. Remove the paneer from the pan and set it aside.
In the same pan, add the minced garlic and sauté for 1-2 minutes until it turns fragrant.
Add the sliced onions and sauté for 2-3 minutes until they turn translucent.
Add the sliced carrots, broccoli, and cauliflower. Stir well and cook for 4-5 minutes until the vegetables are cooked but still have a crunch.
Add the sliced red and green bell peppers, and salt. Stir well and cook for another 2-3 minutes.
Add the roasted paneer cubes and mix well, ensuring the paneer and vegetables are coated in the garlic and spices.
Garnish with fresh coriander leaves and serve hot.
