Preparation
- Wash and cut fish into pieces.
Cooking Steps
Heat oil in a large pot over medium heat. Add onions and garlic, and sauté until they are soft and fragrant.
Add chopped red bell pepper and green bell pepper. Cook for another 2-3 minutes, stirring occasionally.
Add chopped tomatoes, dried oregano, dried basil, salt, black pepper, and water. Stir well to combine.
Reduce heat to low and let the mixture simmer for about 10 minutes.
Add the fish pieces to the pot, and simmer for another 20-30 minutes, or until the fish is cooked through and opaque.
Garnish with chopped parsley and serve hot.
