Instructions
Preparation
For Preparing Sriracha sauce:
Combine chili peppers, garlic, and salt in a blender or food processor and blend until finely chopped.
Transfer the mixture to a saucepan and add distilled vinegar and sugar. Bring to a boil over medium heat, then reduce the heat and let it simmer for 5-10 minutes until the sauce thickens.
Remove from heat and let the sauce cool to room temperature.
Cooking Steps
In a large bowl, toss the chicken pieces with cornstarch until well coated.
Heat the vegetable oil in a large skillet over medium-high heat. Add the coated chicken pieces and cook until golden brown and crispy, stirring occasionally.
Remove the chicken from the skillet and set it aside on a plate.
In the same skillet, add the diced bell peppers, onion, garlic, and ginger paste. Cook for 2-3 minutes until the vegetables are slightly softened.
In a small bowl, whisk together soy sauce and Sriracha sauce.
Add the cooked chicken back into the skillet with the vegetables and pour the soy sauce mixture over the top. Stir well to coat everything evenly.
Cook for another 2-3 minutes until the sauce thickens and the chicken is cooked through.
Season with salt and black pepper to taste.
Garnish with fresh cilantro leaves and serve hot.
