Preparation
-Wash, rinse white rice and soak in water for 30 mins.
-Boil white rice.
Cooking Steps
Heat oil in a wok or pan over medium-high heat.
Add minced garlic and sauté for a minute until fragrant.
Add chopped onions and sauté for 2-3 minutes until they turn translucent.
Add sliced mushrooms and sauté for another 2-3 minutes until they are cooked.
Add chopped tomatoes and cook for 2-3 minutes until they are soft.
Add boiled rice to the pan and mix well with the vegetables.
Add salt and pepper to taste and mix well.
Make a well in the center of the pan and add egg whites to it.
Scramble the egg whites until cooked and mix with the rice and vegetables.
Garnish with fresh coriander leaves and serve hot.
