Instructions
Cooking Steps
Rinse the raw brown rice in water and soak for 30 minutes.
Drain the water and cook the rice in 2 cups of water until it's fully cooked. Fluff the rice with a fork and set it aside.
Heat a non-stick pan over medium heat. Add oil and let it heat up.
Add cumin seeds and let them splutter.
Add chopped onions and green chili. Sauté until onions turn translucent.
Add chopped tomatoes and sauté for 2-3 minutes until they turn mushy.
Add turmeric powder, red chili powder, and salt. Stir well.
Add egg whites to the pan and scramble them with the masala.
Add the cooked brown rice and mix well with the eggs and masala.
Cover the pan with a lid and let it cook for 2-3 minutes over low heat until the rice is heated through.
Garnish with fresh coriander leaves and serve hot.
