Instructions
Cooking Steps
Pulse the cauliflower florets in a food processor until they resemble rice grains.
Heat oil in a large skillet over medium heat.
Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant.
Add the chopped onion and carrot to the skillet and cook for 3-4 minutes until they are tender.
Add the peas to the skillet and cook for another 1-2 minutes until they are heated through.
Push the vegetables to the side of the skillet and add the lightly beaten egg to the empty side. Scramble the egg until they are fully cooked, then mix them with the vegetables.
Add the cauliflower rice to the skillet and stir well to combine with the vegetables and egg.
Season with soy sauce or tamari, salt to taste.
Cook for 5-7 minutes, stirring occasionally, until the cauliflower is tender and lightly browned.
Remove from heat and garnish with fresh herbs, if desired.
