Preparation
Sterilize the Equipment:
- Wash all jars, utensils, and bottles with warm soapy water and rinse thoroughly. This prevents contamination that can affect fermentation.
Prepare the Sugar Water for Kefir Grains:
- Dissolve 1/4 cup (50g) of sugar in 1 cup (240ml) of warm filtered water. Stir until completely dissolved.
- Add the remaining 3 cups (720ml) of room-temperature filtered water to cool down the sugar solution.
Cooking Steps
Step 1: Prepare Water Kefir
Activate the Water Kefir Grains:
- Place the water kefir grains in a clean glass jar.
- Add the prepared sugar water to the jar, ensuring the grains are fully submerged.
Ferment the Kefir:
- Cover the jar with a breathable cloth or coffee filter and secure it with a rubber band. Do not use an airtight lid.
- Allow the kefir grains to ferment at room temperature (20-30°C) for 24-48 hours. The longer it ferments, the tangier and fizzier the kefir will become.
Strain the Kefir:
- After fermentation, strain the liquid (water kefir) into a clean jar using a plastic or stainless-steel strainer.
- Reserve the kefir grains for the next batch. Rinse them gently with filtered water before reusing.

Step 2: Prepare Cucumber Mint Lime Water Kefir
Flavoring the Kefir:
- In a clean jar or bottle, add cucumber slices, fresh mint leaves, and lime juice to the prepared water kefir.
Secondary Fermentation:
- Seal the jar or bottle with an airtight lid and let it sit at room temperature for 12-24 hours to infuse the flavors and create natural carbonation. Monitor the bottle to release pressure if needed.
Chill and Serve:
- After fermentation, strain the flavored kefir into serving glasses or bottles, discarding the cucumber and mint leaves.
- Serve chilled with ice cubes.
