Preparation
Season the chicken breasts with salt and pepper on both sides.
Cooking Steps
Cook the Chicken:
- Heat olive oil in a large skillet over medium heat.
- Season the chicken breasts with salt and black pepper on both sides.
- Sear the chicken in the skillet for 4-5 minutes per side until golden brown and fully cooked (internal temperature should reach 165°F or 74°C). Remove the chicken and set aside.
Prepare the Garlic Sauce:
- In the same skillet, lower the heat and add little oil.
- Add minced garlic and sauté for 1-2 minutes until fragrant (do not let it brown).
- Pour in the water and stir, scraping any browned bits from the skillet.
- Add heavy cream and stir well.
Add Cheese:
- Slowly mix in the grated mozzarella while stirring continuously. Allow the cheese to melt and the sauce to thicken.
Combine Everything:
- Add the Italian seasoning (Dried oregano, thyme, basil, rosemary, black pepper) and check the seasoning of the sauce, adding more salt and pepper if needed.
- Return the cooked chicken breasts to the skillet, spoon the sauce over the chicken, and let it simmer for 2-3 minutes.
Serve:
- Garnish with freshly chopped coriander leaves and serve hot.
