Instructions
Cooking Steps
In a large saucepan, heat the oil over medium heat. Add the chopped onion and cook until translucent, about 3-5 minutes.
Add the minced garlic and cook for another minute until fragrant.
Add the chopped carrot, peas and cook for a few minutes until slightly tender.
Pour in the water, add the sweet corn kernels, and bring to a gentle simmer.
Add the ground cumin, salt, and white pepper. Stir well.
Cover the pot and let it cook for about 15-20 minutes, or until the vegetables are tender.
Taste the soup and adjust seasoning if needed.
Serve hot, garnished with parsley.
