Instructions
Cooking Steps
Heat the oil in a pan over medium heat.
Add the chopped onions and sauté for 2-3 minutes until they turn translucent.
Add the minced garlic, grated ginger, and chopped green chili (if using). Sauté for another 1-2 minutes.
Add the chopped tomatoes and cook for 3-4 minutes until they turn mushy.
Add the turmeric powder, cumin powder, coriander powder, and salt. Stir well.
Add the chopped mixed vegetables and mix well, ensuring that the vegetables are coated with the masala.
Add a little water, cover the pan, and let the vegetables cook for 10-15 minutes over medium heat until they are tender.
Garnish with fresh coriander leaves and serve hot .
