Ingredients
Chopped Cucumber
1 cup (200g)
Chopped Carrot
1 small cup (80g)
Chopped Tomato
0.5 cup (80g)
Red Onion
0.25 cup, chopped (50g)
Clove Garlic, Chopped
1 tsp (5g)
Chopped Green Chilli
1 tsp (2g)
Cumin seeds

Instructions
Cooking Steps
Heat a pan over medium heat and dry roast cumin seeds for a minute.
Add grated ginger, minced garlic, and chopped green chili. Sauté for a few seconds.
Add chopped onion and sauté for a minute.
Add chopped tomato, chopped carrot, and chopped cucumber. Mix well.
Add turmeric powder, black pepper powder, and salt. Mix well.
Add 3 cups of water and bring it to a boil. Let it simmer for 10-12 minutes until the vegetables are cooked and tender.
Turn off the heat and let the mixture cool down.
Once it cools down, blend the mixture until smooth.
Pour the soup into a large bowl, add lemon juice, and mix well.
Chill in the refrigerator for at least 2 hours.
Before serving, stir in the chopped fresh coriander leaves.
