Cooking Steps
Heat olive oil in a pot over medium heat.
Add minced garlic, grated ginger and chopped green chilies. Sauté for 1-2 minutes until aromatic, but do not let it brown.
Add roughly chopped coriander leaves and sauté for another 30 seconds.
Pour in water. Bring it to a boil, then reduce the heat and let it simmer for 8-10 minutes. This allows the flavors of garlic, ginger, and coriander to infuse into the broth.
Add salt and black pepper powder to taste.
Turn off the heat and strain the soup using a fine-mesh strainer or cheesecloth to remove all solids, leaving behind a clear, flavorful broth.
Stir in freshly squeezed lemon juice.
Serve hot in bowls, garnished with a few coriander leaves for a touch of freshness.
