Rinse the poha in water and drain well. Spread it out on a clean cloth and let it dry for a few hours.
Heat oil in a pan over medium heat. Add mustard seeds, cumin seeds, and dried coconut pieces. Let them splutter.
Add raw peanuts and cashews. Sauté for 2-3 minutes until they turn golden brown.
Add raisins and sauté for another 1-2 minutes until they plump up.
Add turmeric powder, red chili powder, and salt. Mix well.
Add the dried poha to the pan and mix everything well until the poha is coated in the spice mix.
Cook for 3-4 minutes over low heat until the poha is crispy.
Let it cool completely and store in an airtight container.
