Besan (chickpea flour)
1 small cup (100g)
Homemade Yogurt (skimmed milk)
0.5 small cup (60g)
Plain Water
0.25 small cup (60g)
Ginger Paste
1 tsp (5g)
Chopped Green Chilli
2 tsp (4g)
Baking Soda
0.5 tsp (2.5g)
lemon juice
1 tbsp (15g)
Mint leaves

Instructions
Cooking Steps
In a mixing bowl, combine the chickpea flour, yogurt, water as needed, ginger paste, green chili, lemon juice, and salt. Whisk together until a smooth batter is formed.
Grease a steamer or a dhokla plate with cooking spray or oil.
Add the baking soda to the batter and mix well. Pour the batter into the greased plate.
Steam the dhokla for 15-20 minutes or until a toothpick inserted in the center comes out clean.
In a blender, combine the mint leaves, coriander leaves, green chili, ginger, cumin seeds, salt, and a little water. Blend until a smooth chutney is formed.
Cut the steamed dhokla into bite-sized pieces and serve with mint chutney.
