Cooking Steps
Marinate the Chicken:
In a bowl, combine the olive oil, vinegar, minced garlic, Dijon mustard, salt, and pepper. Mix well to make the marinade.
Place the chicken breasts in a shallow dish. Pour half of the marinade over the chicken, reserving the other half for dressing the salad. Cover the dish.
Preheat your grill to medium-high heat.
Remove the chicken from the marinade and discard the used marinade.
Grill the chicken for about 6-8 minutes per side, or until the internal temperature reaches 74°C (165°F) and the chicken is cooked through.
Remove the chicken from the grill, let it rest for a few minutes, then slice it into thin strips.
In a large salad bowl, combine the mixed sliced plums, sliced red onions.
Add the grilled chicken slices on top of the salad.
Drizzle the lemon juice over the salad.
