Preparation
-Wash and cook brown rice separately. keep aside
Cooking Steps
Heat oil in a large skillet or wok over medium-high heat.
Add chicken pieces and cook for 3-4 minutes until they turn white on the outside.
Add minced garlic and grated ginger and sauté for 2-3 minutes until fragrant.
Add the mixed vegetables and cook for 2-3 minutes until they are tender.
Add the cooked brown rice and mix well with the chicken and vegetables.
Season with salt and pepper to taste.
