Cooking Steps
• Wash and soak chana dal in water overnight. Then add green chilies, ginger, coriander, fennel, jeera, cinnamon and cloves in the mixer jar. Grind them coarsely.
Add the remaining whole gram dal, pinch hing powder, chopped curry leaves, finely chopped coriander leaves, chilli flakes and salt. Mix them well, the batter for the vadas will be ready.
• Now take a little batter, round it, press it and make a vada and keep it on a plate. Similarly prepare all the vadas. Now heat oil in a pan, the oil should be medium-high hot and the flame should be medium-high.
• Put the vadas in hot oil for pan fry or shallow fry. Let them fry for some time, then flip them and fry them till they turn golden brown from both sides. Serve them hot.
