Cooking Steps
Heat oil in a large pot over medium heat. Add onions and garlic and sauté for 2-3 minutes until the onions turn translucent.
Add chopped carrots and stir well.
Add cumin powder, coriander powder, salt, and pepper. Stir well.
Pour water into the pot and bring the mixture to a boil. Reduce the heat to low, cover the pot, and let the soup simmer for 20-25 minutes until the carrots are soft.
Using an immersion blender or a regular blender, puree the soup until smooth.
Add cubed tofu to the soup and cook for 2-3 minutes until the tofu is heated through.
Season with salt and pepper to taste.
Ladle the soup into bowls and garnish with fresh parsley leaves.
