Instructions
Cooking Steps
In a small saucepan, heat oil over medium heat. Add the chopped onion and garlic. Sauté for 2-3 minutes until the onion becomes translucent.
Add the chopped carrot, tomato and cumin powder to the saucepan. Cook for another 2-3 minutes, stirring occasionally.
Pour in the water and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the carrots are tender.
Once the carrots are soft, use an immersion blender or regular blender to puree the soup until smooth.
Return the soup to the saucepan and reheat. Season with salt and pepper to taste.
