Instructions
Preparation
-Soak brown rice in water for 30-40 minutes before cooking.
Cooking Steps
In a medium saucepan, combine the brown rice and water. Bring to a boil, then reduce heat to low and cover. Cook for 30-40 minutes until the water is absorbed and the rice is tender.
Preheat a grill or grill pan to medium-high heat. Brush paneer cubes with olive oil and season with salt and pepper. Grill for 2-3 minutes per side until lightly charred.
In a large skillet, heat a nonstick pan over medium heat. Add diced onion and minced garlic and sauté for 2-3 minutes until the onion is translucent.
Add diced bell peppers, diced zucchini, salt, and pepper. Sauté for an additional 5-7 minutes until the vegetables are tender.
Divide the cooked brown rice into four bowls. Top each bowl with the grilled low-fat paneer and the mushroom and vegetable mixture.
Add chopped herbs to each bowl and garnish with fresh lemon wedges.
