Brown rice
Rinse the brown rice in water until the water runs clear.
In a pot, add brown rice, water, Mix well.
Bring it to a boil over medium-high heat.
Once it starts boiling, reduce the heat to low and cover the pot with a lid.
Let it simmer for 40-50 minutes until the rice is cooked and the water is absorbed.
Remove the pot from heat and let it rest for 5-10 minutes.
Fluff the rice with a fork.

In a pan, heat olive oil over medium heat. Add cumin powder, chili powder, sliced bell pepper and chopped garlic. Stir for 5 - 10 mins.
Add cooked black beans and salt. Mix well. Cook for 3-4 minutes until the beans are heated through.
In a bowl, place cooked brown rice.
Top the rice with the black beans, sliced red bell pepper, and sliced avocado.
Garnish with chopped cilantro and lime wedges.
Serve hot.
