Fresh Parsley (chopped)

Instructions
Preparation
-Wash, trim/cut asparagus and broccoli and blanch for few mins.
Cooking Steps
Heat a oil in a pan.
Add blanched asparagus, broccoli, Brussel sprouts and cubed tofu to the pan.
Cook the vegetables and tofu until vegetables tender and the tofu is lightly browned.
Once the vegetables and tofu are done, transfer them to a large bowl. In a bowl, whisk together lemon juice, salt, and pepper to make the dressing.
Add cooked vegetables, tofu to the bowl with the dressing. Toss gently to coat the salad with the dressing.
Sprinkle with fresh parsley and serve.
