Brinjal Bharta (Baigan)

Ingredients
Brinjal - all varieties
400 gms (400g)
Chopped Onion
0.5 medium cup (80g)
Chopped Tomato
1 cup (200g)
Chopped Green Chilli
1 tsp (2g)
Clove Garlic, Chopped
2 tsp (4g)
Common salt
0.5 tbsp (7.5g)
Fresh Coriander Leaves (chopped)
1 tbsp (5g)
Olive Oil
1 tsp (5g)
Turmeric powder
0.25 tsp (1.25g)
Garam Masala
0.25 tsp (0.75g)
Instructions
Cooking Steps
Preheat the oven to 200°C.
Prick the brinjals with a fork and roast them in the oven for 30-40 minutes until they are soft and the skin is charred.
Once the brinjals are roasted, remove them from the oven and let them cool. Once cooled, peel off the skin and mash the pulp with a fork.
Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
Add chopped onions and green chili and sauté for 2-3 minutes until the onions turn translucent.
Add chopped tomatoes and cook for 3-4 minutes until they soften and turn mushy.
Add chopped garlic and salt. Stir well.
Add the mashed brinjal pulp and mix well, ensuring the spices are mixed well with the brinjal.
Cook for 2-3 minutes, stirring occasionally, until everything is well combined.
Garnish with fresh coriander leaves and serve hot.
