Black Rice, Raw
1 small cup (100g)
Chopped Onion
1 small cup (50g)
Green Bell pepper
0.25 cup, chopped (50g)
Green Peas
0.5 small cup (50g)
Carrot
1 cup, chopped (50g)
Cumin seeds
0.5 tsp (2.5g)
Common Salt

Plain Water

Instructions
Preparation
Rinse the black rice in water and soak it for 30 minutes.
Cooking Steps
Heat oil in a pressure cooker.
Add cumin seeds, green cardamom pods. Let them sizzle for a few seconds.
Add sliced onions and sauté for 2-3 minutes until they turn translucent.
Add chopped carrots, green bell pepper, and green peas. Sauté for 2-3 minutes until the vegetables are slightly cooked.
Drain the soaked black rice and add stir well.
Add water, salt to taste, and mix well.
Cover the pressure cooker with a lid and cook on medium heat for 2 whistles.
Turn off the heat and let the pressure release naturally.
Once the pressure is released, open the pressure cooker and fluff the rice with a fork, garnish with fresh coriander leaves.
