Instructions
Preparation
-Wash and chop green tomatoes.
Cooking Steps
In a pot, add chopped green tomatoes, bell peppers, and onions. Add water and bring to a boil.
Reduce heat and let it simmer for 10-15 minutes until the vegetables are cooked and tender.
In a separate pan, heat oil over medium heat. Add cumin seeds, mustard seeds, and fenugreek seeds. Let them splutter.
Add minced garlic and sauté for a minute.
Add turmeric powder and red chili powder. Stir well.
Add this mixture to the pot of cooked vegetables.
Add tamarind pulp and salt to taste. Stir well.
Let it simmer for another 5-10 minutes.
Remove from heat and garnish with fresh coriander leaves.
Serve hot with rice or as a soup.
