0.25 cup, cubed (50g)
Fresh Parsley (chopped)
2 tbsp (10g)
Black Pepper

Instructions
Preparation
Wash, trim asparagus and blanch for few mins.
Cooking Steps
Heat a oil in a pan.
Add blanched asparagus and cubed tempeh to the pan.
Cook the asparagus and tempeh until the asparagus is tender and the tofu is lightly browned.
Once the asparagus and tempeh are done, transfer them to a large bowl. In a bowl, whisk together lemon juice, salt, and pepper to make the dressing.
Add cooked asparagus, tempeh to the bowl with the dressing. Toss gently to coat the salad with the dressing.
Sprinkle with fresh parsley and serve.
