Rinse the moong dal and soak it in water for 2-3 hours.
Drain the water and grind the moong dal into a smooth batter using a blender or grinder. Add water as needed to make a thick batter.
Transfer the batter to a bowl and add grated carrot, zucchini, chopped onion, green chilies, grated ginger, cumin seeds, and salt. Mix well.
Let the batter rest for 10 minutes.
Heat an Appe pan over medium heat and add a few drops of oil in each cavity.
Pour a spoonful of batter in each cavity and cook for 2-3 minutes until the bottom is golden brown.
Flip the Appe using a fork and cook for another 2-3 minutes until the other side is golden brown.
Repeat with the remaining batter.
Serve hot with chutney.
