Puffed Amaranth Seeds

Curry leaves (Kadi Patta)

Instructions
Cooking Steps
Heat a non-stick pan over medium heat. Add amaranth seeds to the pan and roast for 3-4 minutes until they turn golden brown and start popping. Remove them from the pan and set aside.
In the same pan, add peanuts and roast for 2-3 minutes until they turn golden brown. Remove them from the pan and set aside.
In a mixing bowl, combine the roasted amaranth seeds, roasted peanuts, turmeric powder, red chili powder, and salt. Mix well.
Heat oil in the same non-stick pan over medium heat. Add the amaranth-peanut mixture to the pan and stir-fry for 2-3 minutes until the mixture is coated with the spices and becomes crispy.
Remove the pan from heat and let the mixture cool down.
Garnish with fresh curry leaves and serve as a snack.
